You should go to portal_workflow and give the "(Default)" field the value 'plone_workflow'

Then it should be back to normal.

Perhaps you need to click on "Update security settings" also.

But it should not be nessecary, as the workgroup workflows has the same values as the default workflow, except for workgroups and content in those.

But if you are removing the product you should not have anything in those anyway.
